All of the grapes are harvested by hand, with direct press and spontaneous fermentation in stainless steel followed by over a year aging sur lie in stainless steel. Bottled unfined, unfiltered, with very minimal s02 at bottling. Subtle and nuanced on the nose at first, as it opens
