The organically grown grapes come from Saint Gervais in the Gard. Soils Clay limestone Harvest & Vinification Manual harvest. Indigenous yeasts. Vinification in stainless steel vats, natural settling after 24 hours, aging in stainless steel. No inputs other than a minimal amount of SO2.
