with a good old fashioned dose of Carbonic Maceration up front

2021 Domaine Armand Rousseau Pere et Fils Chambertin Clos-de-Beze Grand Cru, Cote de Nuits, France Boundary Breaks 2018 Division Pinot Noir 'Un'Rousseau draws this Grand Cru from multiple parcels in Clos de Bzeincluding Grands Rangs, Clos de Bze Haut, and Vieilles Vigneson east to southeast facing, limestone scree slopes that deliver both perfume and drive. Fermentation was conducted with partial whole clusters over a 19 day cuvaison, followed by 1618 months in French oak (about 60% new); the wine was bottled without fining and with a light filtration.
